Ketchup Fried Rice

Number of Servings: 2
2 C cooked rice, refrigerated 1 or 2 nights
2 large eggs, beaten with fork to mix
1 Tbsp scallions or green onions, chopped
1 tsp salt
1/2 tsp black pepper
2 Tbsp ketchup
Heat non-stick skillet over medium-high heat. Spray with non-stick spray. Add green onions, stir for 30 seconds. Add eggs and scramble until slightly moist. Remove from skillet. Spray skillet again with non-stick spray. Put cold rice in skillet in flat layer. Spray rice with non-stick spray to moisten. Sprinkle with salt and pepper. Stir-fry rice about 30-45 seconds. Squirt/pour ketchup over rice. Stir to coat rice with ketchup, about 1 minute. Add eggs back to skillet and stir to mix in.
