Introduction

Pre heat oven to 375*F Pre heat oven to 375*F
Number of Servings: 16

Ingredients

    3 cups almond meal/flour
    1/4 C melted butter
    1/2 C Honey
    1/2 teaspoon baking soda
    dash of salt
    3 eggs

Directions

Empty almond meal into a large bowl
Place eggs and honey into a blender or magic bullet type blender and mix thoroughly.
Add the egg mixture to the almond meal and blend by hand or with an electric beater
Add butter as needed to bring to a muffin batter consistancy
Blend in baking soda and salt
Line cupcake tins with paper cupcake liners
Spoon batter into cupcake tins filling about one half full
Bake at 375 for 15 to 20 minutes.
