Quick and Easy Acorn Squash

An easy quick side dish, full of nutrition! Your family will just enjoy! Turns weeknight dinner into special occasion! An easy quick side dish, full of nutrition! Your family will just enjoy! Turns weeknight dinner into special occasion!
Number of Servings: 2

Ingredients

    1 Acorn squash
    2 Tablespoons unsweetened apple juice
    2 Tablespoons brown sugar, unpacked
    2 teaspoons ground cinnamon

Directions

Poke through squash skin with fork several times(to keep for blowing up in microwave), Microwave approxamently 10-15 minutes, this speeds up the cooking time! Cut squach in half, remove seeds. Place halves in baking dish. Pour unsweetened apple juice in cavity of squash, sprinkle brown sugar and cinnamon. Bake at 350 for 15-20 minutes.
Makes 2 servings
I have also added nuts, apples, or raisins to the center mixture--very tasty! but not included in the nutritional calculations.
