16 oz cooked chicken breast
3 medium apples (gala or honeycrisp)
1/3 cup packed raisins (regular or golden)
3/4 cup fat free mayonnaise
1.5 TBS Curry powder
4 dashes Garam Masala spice
Core and chop the apples into roughly 1/2 size pieces. Combine with raisins. Once chicken has cooled, add to apple mixture and add in the fat free mayonnaise. Stir until completely mixed, then add the spices and stir again. Add salt to taste if desired.
Yields approximately 2.5 lbs of salad (enough for two people to have a couple of lunches for the week)
