Mediterranean Shrimp Flambe'

Introduction

This is a wonderful dish that is light and healthy. And very fun to make especially if you are a bit of a fire bug :) It uses ouzo which is an anise flavored liquor from Greece and can be found at any liquor store. And very fun to make especially if you are a bit of a fire bug :) It uses ouzo which is an anise flavored liquor from Greece and can be found at any liquor store.

Ingredients

    2 Tbsp olive oil
    1 lb large uncooked shrimp, peeled
    1 medium onion, minced
    2 Tbsp garlic, minced
    1/2 tsp dried oregano
    1/4 tsp red pepper flakes
    1 14oz can of diced tomatoes with juice
    1/4 cup ouzo
    1 cup feta cheese, crumbled
    2 tsp dried parsley

Directions

1. Heat the olive oil in a large skillet over high heat until just smoking. Add shrimp in a single layer over the bottom and allow to cook until just starting to turn pink, about 30 seconds. Remove from heat and transfer the shrimp to a bowl.


2. Lower heat to medium high and add onion to the skillet, cook until softened. Stir in garlic, oregano and red pepper flakes. Cook until fragrant, about 30 seconds. Stir in tomatoes with their juice and cook until beginning to thicken. About 2 minutes.


3. Stir in the shrimp and ouzo. Ignite the ouzo and stir carefully, so as not to get burned, until the flames subside. Remove from heat and sprinkle with feta cheese and parley before serving.
