South Beach Baked Oatmeal

Introduction

I loved having this when I got to Phase 2 of South Beach! So Yummy! Can make ahead and heat it up throughout the week! I loved having this when I got to Phase 2 of South Beach! So Yummy! Can make ahead and heat it up throughout the week!
Number of Servings: 12

Ingredients

    4 eggs (Or Egg Beater)
    2 cup Splenda
    1 cup applesauce
    6 cups oats (I get the old-fashioned, not quick-cooking)
    2 cup skim milk
    4 t. baking powder
    1 t. salt
    1 t. cinnamon
    4 T. brown sugar or Splenda brown sugar
    Optional: chopped apples, dried cranberries, blueberries, walnuts

Directions

Combine the eggs, sugar, and oil. Add the oats, milk, baking powder, and salt. Mix in the cinnamon, brown sugar, and any optional ingredients.
Pour contents into a lightly greased 9”x13” pan and bake at 350 degrees for 30 minutes.
