Savory Lentil & Bacon Soup

Introduction

This great slow-cooker soup is delicious and hearty - perfect for a cold day!! Leftovers taste even better, as the flavors blend even more! This great slow-cooker soup is delicious and hearty - perfect for a cold day!! Leftovers taste even better, as the flavors blend even more!
Number of Servings: 10

Ingredients

    1 lb (2.25 cups) dried lentils
    4 cups chicken broth
    8 slices turkey bacon, chopped
    2 medium carrots, chopped
    3 medium potatoes, chopped
    1 medium onion, chopped
    4 cups water
    1 tsp dried thyme
    1/2 tsp salt
    1/2 tsp pepper

Directions

Mix all ingredients in a 4-6 qt slow cooker.
Cover and cook on low for 8-9 hours, or on high for 3-5 hrs or until lentils are tender. Stir well before serving.

    This soup is very good and easy to make, I added a bay leaf and some garlic, sage, and liquid smoke. I also used three kinds of lentils, and made it smooth with the immersion blender. This is yummy and healthy, lots of fiber. You can use low salt broth, to make the sodium lower. - 2/16/09

    Very good lentil soup! It was fast and easy to make. Thanks for the recipe and I'd like to thank the other members for their advices about seasoning. I added a bay leaf, some garlic. Also, I used chopped ham instead of turkey bacon because I had a lot of ham leftovers...Thanks again! - 5/2/09
