Introduction

Low fat puerto rican style rice and beans
Nutritional value is for double beans, no ham
pork or extra veggies. Great as a meal or a side dish. My 6 year olds favorite!
Low fat puerto rican style rice and beans
Nutritional value is for double beans, no ham
pork or extra veggies. Great as a meal or a side dish. My 6 year olds favorite!

Number of Servings: 9

Ingredients

    1.5c brown rice
    3c water (more for softer rice)
    1 pkt sazon con pimiento
    1T garlic powder
    3T sofrito (frozen or fresh)
    2 tsp adobo
    1 or 2 cans pink beans rinsed and drained
    2T chopped ham or pork (optional)

Directions

Put all ingredients except beans in 2 qt saucepan. Bring to a boil . Stir. Reduce to simmer with a lid. Once all water is absorbed add pink beans(or whatever kind you prefer). You can also add corn, green olives, red pepper or other veggies. Makes 8 1 cup servings.
