Jen's Butternut Squash/Apple Stew

Introduction

This is a great cold weather, comfort food. We like to put in in the crock pot and cook it all day (6-8 hours) on high. Can also be made on the stove. This is a great cold weather, comfort food. We like to put in in the crock pot and cook it all day (6-8 hours) on high. Can also be made on the stove.
Number of Servings: 12

Ingredients

    1 Medium apple of your choice
    1 cup chopped onions or pearl onions
    1 can low sodium, fat free chicken stock
    1 butternut squash
    2 sweet potatoes (optional recipe is calculated with them)
    1 turkey kielbasa (also optional recipe is calculated with it)

Directions

Peel the squash and sweet potatoes, cube apple, squash, turkey kielbasa, sweet potatoes and chop onion. After the first two hours, add garlic, salt and pepper to taste and mash down with a potato masher. I know this sounds weird, but it helps to make the squash, potatoes and apple break down faster. Makes 12-14 one cup servings and it will fill the crock pot to the top. Serve one cup servings and garnish with sour cream.
