Simple Low Fat Banana Bread

Introduction

A tasty low fat version of this classic quick bread. A tasty low fat version of this classic quick bread.
Number of Servings: 16

Ingredients

    3 cups all-purpose flour
    1 tsp baking soda
    1 tsp salt
    1 tbsp cinnamon
    2 cups sugar
    4 eggs, beaten
    2 cups mashed bananas
    1.5 cups unsweetened applesauce

Directions

1. Mix dry ingredients.
2. Add eggs, bananas, and applesauce.
3. Mix well.
4. Pour into two greased bread pans.
5. Bake at 325 degrees for about one hour, or until toothpick inserted at middle comes out clean.
6. Makes 2 5"x9" loafs, about 16 servings.

  • This was wonderful! Moist and delicious - and you'd never suspect it was lowfat. I halved the recipe (enough batter for just one loaf) and it filled 12 muffin cups! And they cook in less time - just 25-28 minutes.
    (p.s. please be aware that the sugar isn't included in the nutrition info!) - 11/24/08

  • I made this recipe and it says 16 slices per pan. That is alot and It appears that there is more fat and calories in it than stated with the amt of sugar. I cut the regular banada bread into less than 16 serv and it's more fattening and I use skim milk and not buttermilk in reg one. ?? It's good - 11/2/08

    To clarify, there are 16 servings in two pans, as the recipe does make two loaves. So, that's 8 slices per loaf. And somehow the sugar got deleted from the ingredients list for the nutritional info. I just fixed it. Thanks!
