Florintine beef pinwheals

Ingredients

    12 oz thin cut sirloin tip steak
    1 cup onion chopped
    2 cup sliced mushrooms
    8 cups fresh spinach chopped
    3 tbsp olive oil
    2 tbsp grated Parmesan Cheese
    salt and pepper to taste

Directions

Pound meat with flat side of mallet until doubled in size. Sate onion and mushrooms in 2 tbsp of the olive oil until soft. Add spinach and continue cooking until wilted. Drain pressing out as much liquid as possible. Top steak with vegetable mix. Sprinkle with cheese. Roll and secure with string or toothpick. Place on broiler pan and drizzle with remaining olive oil. Broil on high for about ten minutes per side. Remove string and cut into four equal portions.
