Quick Veggie Soup

Introduction

Made with mostly canned items. It's quick & easy, but not necessarily fresh. Made with mostly canned items. It's quick & easy, but not necessarily fresh.
Number of Servings: 8

Ingredients

    1 lb lean ground beef
    1 medium onion, diced
    3 cloves garlic, diced
    1 can no sodium corn, drained
    1 can no sodium green beans, drained
    2 cans no sodium mixed vegetables, drained OR 1 medium bag frozen mixed vegetables
    1 can no sodium stewed or diced tomatoes
    2 boxes or 4 can reduced sodium chicken broth.
    2 large or 3 small bay leaves
    Italian seasoning (to taste)
    Cajun Seasoning (to taste, careful!)

Directions

Brown the ground beef with the onions, garlic & 1 tsp Italian seasoning in a deep pot.
Add drained vegetables, tomatoes, broth & bay leaves. Heat through. Adjust seasonings to taste. (You'll need more Italian seasoning & Cajun seasoning/salt than you'd think since you {should have} used low/no sodium everything).
