Fabulously Easy Wheat Pita Bread

Introduction

This recipe is adapted from one I found on Food Network's website. While they use twice as much white flour as wheat, I decided to increase the wheat flour for health benefits. If you've never made fresh pita bread, this is the recipe to try! There are a lot of steps, but considering bread recipes, this is not very dificult. Number of Servings: 20

Ingredients

    1 packet active dry yeast
    2.5 c. warm water, about 105 degrees
    4 c. whole wheat flour, divided
    2 c. bread or unbleached all purpose flour
    2 tbsp. olive oil
    1 tbsp. kosher salt

Directions

1. In a microwave safe measuring cup, add 2.5 c.
water and microwave about 1 minute. Make
sure temp is about 105-110.
2. In a large bowl, add water and yeast.
3. Add 1 c. whole wheat flour, stirring well, then
add 1 c. whole wheat flour.
4. Stir 100 strokes in same direction.
5. Allow to rest 10 minutes (up to 2 hrs.)
6. Add olive oil and salt, stirring to combine.
7. While stirring, add remaining 2 c. wheat flour, 1
c. at a time.
8. Add white flour just until dough is hard to stir.
9. Turn onto lightly floured surface and knead 8-
10 minutes, until dough is smooth and elastic.
10. Place dough in oiled bowl, turning to coat.
Cover with plastic wrap and allow to rise,
about 1-2 hours in draft-free place. I use a
cool oven with the light on.
11. Punch dough down.

At this point, dough can be refrigerated for up to a week. When you want to bake, make sure dough is room temperature. Pinch off a piece of dough and shape into a ball. Pat out to desired thickness. Bake on a preheated stone in a 450 degree oven for about 6 minutes, or until puffed and starting to brown.

Recipe makes 16 8" pitas or app. 20 6" pitas.
