Number of Servings: 6

Ingredients

    6 small boneless, skinless, chicken breasts.
    1/8 cup oil
    1 can cream of chicken soup
    4 medium potatoes, peeled & cut in eights
    4 medium carrots, peeled & sliced
    1 medium onion, chopped
    1 cup celery, chopped
    1/2 cup water
    1 Tbs. dried parsley
    pepper to taste

Directions

1. Warm oil in large skillet, add chicken and slightly brown.
2. Add potatoes, carrots, onions, celery, soup, and water. Bring to boil.
3. Simmer for 30 minutes or until potatoes are soft.
4. Sprinkle with parsley and serve.

Makes 6 servings.
