This fast lunch can be made quickly and is very satisfying for so few calories. Capers add a punch of flavor and make a common salad special. Plain food benefits from a little dash of pricey spices now and then. This fast lunch can be made quickly and is very satisfying for so few calories. Capers add a punch of flavor and make a common salad special. Plain food benefits from a little dash of pricey spices now and then.

Ingredients

    Capers, canned, 1 tbsp, drained
    Tuna, Canned in Water, .5 cup, solid or chunks
    Pepper, black, 1 dash
    Ronzoni, Whole Wheat Penne Rigate, 2 oz
    (or elbows or rigatoni)
    Kraft Mayonnaise Fat Free, 1 tbsp




Directions

Cook pasta in unsalted water; remember whole wheat pasta takes a bit longer than traditional pasta. (Leave the salt out as the tuna and capers are full of sodium.) Squoosh water out of the tuna can (for the cat). Rinse capers. Drain pasta and rinse quickly in cool water. Mix capers, pasta, tuna and mayo and top with freshly ground black pepper. Serve on a bed of lettuce leaves. Feeds just one in a hurry and fills you right up with no leftovers to tempt you later.
