Introduction

BANANA BREAD, LOW FAT, HIGH FIBER, SUGAR FREE and yummy too. BANANA BREAD, LOW FAT, HIGH FIBER, SUGAR FREE and yummy too.
Number of Servings: 12

Ingredients

    4 large brown spotted bananas
    1/4 cup cooking oil
    1/4 milk
    4 egg whites
    1 cup splenda
    1 1/2 cups whole wheat flour
    1/2 cup wheat germ
    1 tsp baking soda
    1/2 tsp salt
    2 tsp baking powder
    1/2 cup walnuts (optional)

Directions

I make mine in the food processor but you can use a bowl and a blender. Mix wet ingredients then add dry ingredients minus walnuts. Fill cupcake/muffin tins 3/4 full top with crushed walnuts. Makes 12 nice sized muffins. bake 35 minutes at 350 or until done (done when a toothpick comes out dry when inserted.
