Southwest Corn & Red Pepper Salad

Introduction

Each serving is about 3/4 cup vegetables. Each serving is about 3/4 cup vegetables.

Ingredients

    1/2 cup seasoned rice vinegar
    1/4 cup sugar
    1 clove garlic, minced
    3/4 cup fresh chopped parsley
    1/2 cup chopped green onion
    1 large red bell pepper, diced in 1/2 inch pieces
    2 16-ounce cans no-salt-added corn, drained thoroughly

Directions

Combine seasoned rice vinegar, sugar and garlic in a large bowl and mix well. Add all other ingredients. Cover and chill until ready to serve.
Makes 8 servings.
