Low fat Pumpkin Parfait

Introduction

This recipe was given to me from a co-worker and is a great substitute for the higher fat, pumpkin pie. This recipe is actually better if served the next day. Number of Servings: 8

Ingredients

    2 fat free, sugar free angel cakes
    2 pkgs sugar free vanilla pudding
    3 cups skim milk
    1-15oz can of pumpkin pie filling
    2 cups fat free cool whip
    1 tbsp Pumpkin pie spice

Directions

In a large bowl, mix pudding, milk, pumpkin and pumpkin pie spice with a blender until creamy.
Then, fold in the cool whip.
Break up the angel food cake into bite size pieces.
Using a trifle dish, put a layer of the pumpkin mixture and continue to do this until all ingredients are used.
Sprinkle top of mixture with pumpkin pie spice and serve.
