Mom's Cheese Pie

Introduction

This is how my mother in law used to make this for us. She used a home made dough though. I use Athens #7. This is how my mother in law used to make this for us. She used a home made dough though. I use Athens #7.

Ingredients

    Phyllo Dough 16 0z
    Egg, fresh, 12 large
    Cottage Cheese, 2% 2 cups
    French Feta Cheese 1/4 to 1/2 cups crumbled
    Butter 1 stick, melted
    salt, 1/2 to 1 tsp salt

Directions

Mix eggs, until blended. Then add cottage cheese, crumbled Feta, and salt in Stand Mixer mix until blended, but lumpy. You want small chunks of Feta and Cottage Cheese.

Layer Phyllo and egg mixture in 13x9 or larger 15 inch pan.

Grease pan with a drizzle of olive oil, spreaded with a paper towel.

lay out one piece of Phyllo, brush with butter using a pastry brush. Lay out 2nd piece of Phyllo again brush with butter.

Using a large mixing or serving spoon add some of the egg mixture spreading aroung to edges.

Lay out another sheet of phyllo and brush with butter. Layout a second sheet of phyllo and brush with butter.

Add another layer of egg mixture. Repeat until the egg mixture is used up. You may have a few sheets of phyllo for another use.

Cover loosely with foil to prevent over browning. Bake at 350 for 1 hour. Remove foil bake another 20 minutes until browned.
