Introduction

This deliciously light (and fast!) side dish is a perfect pairing with poultry or fish. This deliciously light (and fast!) side dish is a perfect pairing with poultry or fish.
Number of Servings: 5

Ingredients

    1 C couscous
    1 C low sodium chicken broth
    1/4 C water
    3 Tbsp olive oil
    1 clove garlic, minced
    Zest of 1 lemon
    1/4 C fresh dill, finely chopped
    salt
    pepper

Directions

In a medium sized pot, bring chicken broth and water to a boil.

In another small pan, heat 1 Tbsp olive oil over medium heat; reserve the other 2 tbsp. Add the garlic and cook just until golden. Add lemon zest, salt and pepper (to taste). Heat until combined and fragrant.

Once the broth has begun to boil, add the garlic and lemon zest. Give a good stir and then add the couscous. Take the pot off of the heat and cover for 5 minutes.

Add remaining olive oil and the dill, fluff with a fork and serve.

Makes 5 servings.
