Number of Servings: 8

Ingredients

    *Coconut Milk, light 1 can
    White Wine, 8 fl oz
    Milk, 1%, .5 cup
    *Campbell's low sodium chicken broth, 1 cup
    corn flour, 3 tbsp ( or rice or wheat if glutten free not important.
    Carrots, raw, 2 medium (remove)
    Peas, frozen, 1 cup
    Curry powder, 1 tsp
    Ginger, ground, 1 tsp
    Pepper, black, 1 tsp
    Chicken Breast, no skin, 3 breast, bone and skin removed

Directions

The night before or first thing in the morning add ingredients to the crock pot and stir. Remember to whisk the flour into a little of the liquid before adding to the crock.
Set inner liner in fridge overnight and return to crock in the morning and turn on low. If It needs to cook la bit longer than 7 hrs it will not matter.
I like to defrost the peas and warm them and add them right before eating. I think they taste better not sitting in the crock all day. Up to you.
I like to take out the chicken breasts right before you eat and shred them with a fork and return them to the crock pot and stir them in. Helps the stretch the meat and finishes up thickening the sauce.
Can serve over basmatti rice, corn flour or rice flour pasta
