Tzatziki

Number of Servings: 20

Ingredients

    plain yogurt (low - fat is fine)
    2 meduim cucumbers
    1 clove of garlic, squished
    1tbsp olive oil
    1 tbsp of chopped fresh mint, dill or chives
    salt and pepper to taste

Directions

Drain all excess liquid from yogurt ( dump the yogurt into a strainer lined with a clean dish towel and place over a bowl to catch drippings)
After its drained, refrigerate for at least 2 hours or overnight.
Peel cucumbers and grate them on coarse holes of grater. Place shredded cucumbers in bowl, add 1 tsp of salt, and let sit while waiting for yogurt to drain. Let the cucumber completely drain, so that the paste will not be watery. Place cucumber into a bowl.
Lastly, dump thickened yogurt into bowl with cucumber, add garlic, olive oil, and chopped mint( or whichever ingredient you are using). Season with salt and pepper to taste, and serve as a dip with whatever you like.
Makes about 2 1/2 cups (625 mL)
