Oven Fried Chicken

Chicken breast meat may be a little dry but it goes really well with a cherry peach salsa or other salsa of your choice. It is an easy recipe for me to adapt to a single serving and it is one more way to add flax seed to my diet. 1/2 cup canola oil
1/2 cup grated Parmesan cheese
1/2 cup cornflakes
1/2 cup ground flaxseed
2 tsp. seasoned salt (or a salt free seasoning blend)
1/2 tsp. pepper
1 broiler/fryer chicken (3-4 pounds) skin removed
Directions
Place canola oil in a shallow bowl. In another shallow bowl, combine the Parmesan cheese, cornflake crumbs, flaxseed, seasoned salt, and pepper.
Dip chicken into oil, then coat with crum mixtures. Arrange chicken in a greased 15 x 10 x 1 in. baking pan.
Bake, uncovered, at 375 for 40-45 minutes or until chicken juices run clear.
Serves 4.
