2 tsp EVOO
1/2 onion, chopped
2 cloves garlic, diced or pressed
1 Yves Smart Ones vegeterian italian-style 'sausage', diced
1 cup (2/3 can) great northern beans, drained and rinsed
1 can diced tomatoes w/ italian herbs, undrained
1 pinch crushed red pepper flakes, to taste
6 oz elbow macaroni
Cook pasta in heavily salted water, ommitting fat. Once drained, combine with sauce. Top w/ parm if desired.
Makes 4 servings.
This can be made even healthier (higher fiber and slightly lower calories) with whole wheat pasta instead.
