Chicken with Israeli Couscous (Slowcooker)

Ingredients

    2 Tbs butter
    1 tsp minced garlic
    1 1/2 c fat free reduced sodium chicken broth
    2 Tbs white wine
    3/4 tsp black pepper
    3/4 tsp kosher salt
    1/3 c Israeli couscous
    1/2 medium onion, finely chopped
    2 celery stalks,finely chopped
    2 large carrots, peeled and finely chopped
    5 IQF 3 oz chicken breasts
    1 Tbs fresh parsley, chopped for garnish

Directions

Season chicken breasts with salt and pepper. Add all ingredients to the slow cooker except for seasoned chicken breasts and mix well to combine. Place chicken on top of the mixture.

Cover and cook on low for 6 hours. To serve, transfer chicken to individual bowls. Mix the couscous and vegetables well, then spoon into the bowls alongside the chicken. Sprinkle with fresh parsley if desired.

  • This recipe is horrible. The couscous turns into mush and it has no flavor. Don't waste your time or money on this one. Move along. - 3/9/12

  • This was pretty good. The couscous gets a mushy consistency, although still tastes good...if you like couscous for it's fluffy consistency you might be disapointed with this. I did add Cumin and a pinch of Ginger and doubled the amount of couscous, which only adds 50 cal per serv - 7/8/09
