Sauteed red cabbage ( upkari)

Introduction

All vegetables are quick sauteed in very little oil and a 1/4 cup or less water in India which tastes out of this world and oh! so healthy! It may be called bhaji ( green veggie), uppu kari or as we Konkanis call, Upkari. Ingredients

    Cabbage, red, fresh, .5 head, small (4" dia) (remove)
    *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
    Olive Oil, 1 1tsp
    Indian Andhra mustard seeds ( small, dark brown) 2tsp, 2 gram(s) almost a tsp.
    *Hot Chili Peppers, 1 pepper
    *Hot GREEN Chili Peppers, 1 pepper
    Kosher salt, 0.4 tsp


    Garnish with shredded coconut - fresh or frozen. .2 cup.

Directions

Heat oil in a pan, drop mustard seeds. When they start to krackle, drop the red and green chilies split in two. Drop the chopped, rinsed cabbage and cubed, rinsed potato, sprinkle salt and add 1/4 cup of water. Stir well. Cover tight and let cook till tender. stirring once or twice.

Garnish with shredded coconut.

Serve as a side dish with any entree.
