Bertha's Famous Meatloaf

Introduction

My grandmother made this from scratch without a recipe! My sister sat with her one day as she made it so we could capture the recipe. It is my family's favorite and my husband likes to make meatloaf sandwiches with the leftovers. We eat without any sauce or gravy as it is very moist!! Number of Servings: 8

Ingredients

    1 lb lean or extra lean ground beef
    1/2 lb pork sausage (I use Owen's Regular)
    1/2 cup cracker crumbs (saltines)
    1/2 cup canned tomatoes (diced work nicely)
    1/2 cup 2% milk
    1 well beaten egg
    1/2 can mushrooms (or one small can)
    1/4 cup chopped green pepper
    1/4 cup chopped onion
    1 tsp baking powder
    1 pinch sugar
    1 tsp salt (I omit this as sausage has enough!)
    1/2 tsp black pepper

Directions

Mix all ingredients together well in a greased casserole dish. Bake at 350 degrees for 40 minutes with lid on. Take lid off and bake an additional 10-20 minutes to brown. Makes 8-10 servings of approximately 3-4 ounces.
