Submitted by: JTAIT3
Introduction
This is a very tasty and easy to make dinner. The salmon is cooked in its own tin foil parcels to absorb all the flavours and remain succulent. Perfect served with a green salad and balsamic dressing and some roasted baby new potatoes. This is a very tasty and easy to make dinner. Ingredients
-
Salmon Fillet
6 Baby Tomatoes (plum or cherry), halved
2 Spring Onions (scallions), sliced into 1cm pieces
1 Clove Garlic, sliced finely
1/2 tsp grated Lemon Zest
Juice of half a Lemon
1/2 tbsp Olive Oil
1/2 tbsp Fresh Flat Leaf Parley (chopped)
1 Bird Eye Chilli, sliced with seeds
Salt & Pepper to season
Directions
Makes 1 serving
1. Mix the tomatoes, spring onions, garlic, lemon zest, lemon juice, olive oil, parsley, chilli and salt & pepper in a bowl.
2. Place most of mixture onto a piece of tin foil before placing the salmon on top, making sure the juices don't run away by raising the tin foil to form the base of a parcel.
3. Spoon the remaining mixture on top of the salmon. Lift the long sides of the foil together and roll to close loosely above salmon. Take each end of the parcel and roll tin foil to seal each end.
4. Bake in the oven for 20-25 minutes.
5. Serve the salmon making sure to use all the tasty juices from the parcel. Green salad and baby new potatoes go perfectly.
6. Enjoy!

Made this today, absolutely wonderful. Simple but oh so tasty - couldn't get enough. Even my friends agreed, and joked that they would start eating healthy if every meal tasted as good as this. My new favourite dish, have added to my recipe book! - 3/5/09
