7 Cup Vegetable Broth
1 T Olive Oil
1 Cup Couscous (dry)
1 1/2 Cup Broccoli, Frozen
1 2/ Cup Cauliflower, Frozen
4 Ea Sun Dried Tomatoes
4 Ea Scallions, raw
2 Oz Parmesan Cheese
2. Remove from heat and stir in the couscous.
3. Wait two minutes and stir in the broccoli and cauliflower.
4. Simmer for five minutes.
5. Top each bowl with sun-dried tomatoes, green onions and parmesan cheese.
