Introduction
Very filling and tasty chicken and potatoes with gravy meal. Serves great with a green salad on the side.You can make this even healthier by using a reduced fat cheese and low sodium soup. Very filling and tasty chicken and potatoes with gravy meal. Serves great with a green salad on the side.

Ingredients

4 chicken boneless skinless chicken breasts
1 cup fresh mushrooms sliced
1 can cream of mushroom soup
1 cup shredded chedder cheese
1/2 packet Good Seasonings Italian dressing mix
8 cups mashed potatoes
Directions
place 4 raw boneless, skinless chicken breasts in 9x11 glass baking dish
mix together cream of mushroom soup, sliced mushrooms, shredded cheese, and italian dressing mix
spread over chicken in baking dish
cover with foil
bake at 350 for one hour or until chicken is fully cooked
meanwhile, boil and mash potatoes to make 8 one cup servings
remove chicken from gravy and plate. Spoon gravy over potatoes.
Makes 8 searvings. Each serving has 1/2 chicken breast, 1 cup mased potatoes and 1/8th of the gravy.

You could probably use any brand of Italian dressing mix that you find in your area, I just use good seasonings because it's what grandma always used for this recipie. If you need to know how much to use of the brand you choose- the good seasonings packet is 19g and I use half, so 9.5g of seasoning.

This was delicious. Even my boyfriend and grandmother (neither of which like mushrooms all that much) loved this! The sauce was so delicious that my boyfriend said he wouldn't mind it being served as a dip if it were a little thicker. I used reduced fat soup & reduced fat cheese, very very yummy! - 3/24/09

can you explain what Italian dressing mix is? do you mean like italian salad dressing? sorry, i'm English we have slightly different terminology! THANKS :) - 3/17/09

It wasn't bad, but it lacked taste. I think the next time I'll add garlic or something to give it more of a taste. I added potatoes to the dish and they came out great but the chicken (althought soft) left me wanting more. - 3/2/09

You could also try using the whole packet of italian mix instead of half, I have a friend who makes it that way for more kick, but I find it's too much for my taste. Hope that helps :)
