Baked Apples with Cardamom

Introduction

This yummy Scandinavian dessert is wonderful after a winter supper. Pairs well with beef and pork. If you prefer, eliminate the cardamom, and sprinkle with cinnamon and nutmeg instead. Ingredients

    8 medium sized apples (Gala, McIntosh, Rose and Green apples work well.

    1 tsp brown sugar (unpacked)
    3 tsp Sugar Twin brown sugar replacement
    1 tbsp salted butter
    3 tbsp Smart Balance spread
    5 crushed graham craker squares
    1/2 C Mrs. Butterworth's sugar-free syrup or light molasses
    1.5 tsp ground cardamom

Directions

Pre-heat the oven to 350°F (175°C).

Core the apples. Mix the butter and Smart Balance Spread with the brown sugar and sugar twin, the crushed Graham crackers and the cardamom. Put the apples in an ovenproof dish and fill them evenly with the butter mixture. Pour the light molasses or syrup over the apples.

Bake in the oven for 10-15 minutes. Cooking time will depend on how big the apples are. Feel them – they should be soft to the touch, yet firm.

Serves 8.
