Tomato/Avocado Salad

Introduction

Number of Servings: 4

Ingredients

    3 Medium Roma/Plum Tomatoes, diced
    2 Medium Haas Avocado, diced
    1/4 cup Red Onion Sliced thin
    1 tbsp of Extra Light Olive Oil
    3 tbsp Balsamic Vinegar
    Salt
    Pepper

Directions

1. Dice the Tomatoes and Avocados.

2 Slice the red onion into thin pieces.

3. Mix into the bowl with the Olive Oil and Balsamic Vinegar.

4. Salt and Pepper to taste.

Best if you let it marinate for an hour or so. Then serve.

Makes 4 - 1 cup servings.
