Chicken and rice bake

Introduction

Delicious comfort food without a lot of fat. Delicious comfort food without a lot of fat.
Number of Servings: 6

Ingredients

    1 3/4 cup (or more, just what I had) vegetable rice (you can use any kind; I had leftover Rice a Roni Garden Vegetable rice)
    1 can 98% FF cream of mushroom soup
    1 can vegetable medley, drained
    1 can chicken, 12.5 oz
    1/4 cup Italian bread crumbs
    spray butter
    ground sage
    Italian seasoning

Directions

Mix everything together except bread crumbs in a microwave/oven safe dish. Season to taste with sage and Italian seasonings. Pre-heat in microwave for about 3 minutes, then sprinkle with bread crumbs. Give the top a few quick spritzes of spray butter and pop it into the oven, covered, for about 10-15 minutes. Remove the lid and let it cook the rest of the way until it starts to brown slightly on the top. (Remember, you're not really cooking it per se; everything is already cooked. You just want it heated and the bread crumbs a little toasted.) Divide into six servings.
