Ingredients

    The equivalent of 2 large bell peppers (any color combination as long as Red and/or Orange are included), seeded and sliced into 1/4 inch long slices
    1 Large Yellow Onion, sliced thinly in long slices
    2 Tbs Extra Virgin Olive Oil
    Red Pepper Flakes

Directions

Heat the olive oil in a large sautee pan over medium high heat.
Add the onions and peppers and cook until the onions just start to soften, stirring periodically for about 4 minutes.
Turn heat down to low and continue cooking and stirring until all peppers and onion have turned soft and have started to carmelize around their edges - about 10 more minutes.
Sweetness you won't believe.
