Black Bean Chili

Ingredients

2 tbsp olive oil
1 onion, diced chunky
2 cloves garlic, minced
4 medium carrots, diced
1 large green pepper, diced chunky
1 cup sliced mushrooms
3 cups diced stewed tomatoes
2 cups black beans, drained
2 cups, kidney beans, drained
1.5 cups yellow corn, drained
3 tsp chili powder
1 tsp cumin
.5 tsp oregano
Directions
Heat oil in a large saucepan, add onion, carrot and garlic. Simmer a couple of minutes. Add all the spices and simmer for a couple more minutes. Add the rest of the ingredients to the pot and bring to a boil. Reduce heat and simmer for at least 45 minutes. Flavor and texture improves with extra time.

I really love this chili, I've been making it for years. It's not too spicy(as I have young children), but you could really kick it up a notch with more chili powder or hot sauce. I serve it with grated parm. and whole wheat french bread. I hope you enjoy it!
