Ingredients

    *Baked Potato, with skin, 4 large (3" to 4-1/4" dia.
    Scallions, raw, 1 medium (4-1/8" long)
    Cheddar Cheese, .25 cup, shredded
    Pepper, black, .5 tsp
    Salt, 1 tsp
    Sour Cream, 1 cup

Directions

Cook potatoes for 10 minutes in microwave,
stop turn potatoes over, cook for another 10 minutes.

Let cool. Slice the potatoes in half. Carefully scoop out the potato, making sure not to tear or break the potato skin.
in a bowl combine sour crem & potatoes. Mince the scallion. Use half of the scallion, in the potato
sour cream mixture, combine the salt & pepper.

Take the cooled potato mixture and pile it back into the halved potato skins.

Bake in a 375 degree oven for 15 minutes. Remove from oven and sprinkle tops of potato with the shredded cheddar cheese. Pop, pototoes back in oven and bake for 5 minutes, to melt the cheese.
