Fruit Pizza

Ingredients

    2/3 c. butter
    3/4 c. Splenda
    1 tsp vanilla
    1/4 c. Eggbeaters
    4 tsp. Nonfat Milk
    1.5 tsp baking powder
    2 c. flour
    1/4 tsp salt
    Dressing:
    1/2 c. Vanilla-flavored Yogurt
    1/2 c. Cool Whip Free (thawed)
    1/2 tsp finely shredded orange peel
    2-3 T orange juice
    Topping:
    Oranges, berries, Kiwi

Directions

Cream shortening, Splenda, and vanilla, add eggbeater, beat until light and fluffy. Stir in milk. Sift together dry ingredients. Blend into creamed mixture. Chill one hour. On lightly floured surface, roll to 1/8" thickness. Cut into shapes. Bake on greased cookie sheet at 375 degrees 6 to 8 minutes.Cool slightly, remove from pan. Makes 3 dozen.

Dressing: In mixing bowl combine yogurt, Cool Whip Free and peel. Add orange juice to desired consistency. Will frost 3 dozen cookies.Or cover and store in refrigerator up to 3 days. Makes 1 cup.

After cookies are frosted: Add thinly sliced fruit. Refrigerate until needed.
