Introduction

Ingredients

1 tablespoon white wine vinegar2 tablespoons raspberry preserves1 1/2 teaspoons Dijon mustard1/8 teaspoon salt1/2 teaspoon grated lemon rind2 1/2 cups (1-inch) sliced asparagus (about 1 pound)1 1/2 cups fresh raspberries2 tablespoons finely chopped pecans, toasted
Directions
Combine first 4 ingredients in a small saucepan; bring to a boil. Remove from heat; stir in rind.
Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain and plunge into ice water; drain. Combine preserves mixture, asparagus, and raspberries in a bowl; toss gently to coat. Sprinkle with pecans.
Yield: 6 servings (serving size: about 1/2 cup)

This sounds wonderful. I was concerned that the calorie and fat info didn't sound right. There's only 2 TBS of pecans for 6 servings, and it's the only source of fat. I recalculated and got 53.9 calories per serving and 1.4 grams of fat. This may not be exact, but it's gotta be closer to right. - 11/5/08
