Valentine's Day Low-Carb Pancakes

This is what I whipped up this morning for my sweetie. I wanted to make something low in carbs but sweet enough for him to enjoy (although he still added a splash of maple syrup to his - once a Canadian...) Ingredients

Dry:
1 cup Almond Flour
1 tsp baking powder
1 tsp salt
1 tsp erythritol or other sweetener (to taste)
Wet:
2 large eggs
1 T oil (I use olive oil)
1/4 cup water
Topping:
10gm grated low-carb dark chocolate (I use Well, Naturally sugar-free dark choc)
10 raspberries
1/2 cup whipped cream (unsweetened)
Directions
Sift the dry ingredients into a bowl, and add wet ingredients while stirring carefully.
Pour small amounts into heated frying pan, and flip when bubbles reach the surface (if the bubbles pop and leave a hole, this is a good indicator that it's time to flip).
Divide pancakes between two plates, and top immediately with grated chocolate (which will melt ont othe hot pancakes), then whipped cream and raspberries.
Serve immediately. A very filling breakfast for two.
