Introduction

What happens to cookies when you try to make them a little healthier? I modified a tried and true favorite and came up with this recipe. Number of Servings: 36

Ingredients

    2.5 Tbs butter
    3/4 cup chunky peanut butter
    1 cup brown sugar
    1 egg
    1/4 cup molasses
    1 cup whole wheat flour
    2 Tbsp ground flax
    1 Tbsp wheat germ
    1 Tbsp oat bran
    1 Tbsp minced fresh rosemary (or more)
    2 tsp baking soda
    1/2 Tbsp cinnamon
    1/2 Tbsp ginger
    1/2 tsp cloves
    1/4 tsp salt
    dash cayenne pepper
    1 cup white flour

Directions

Preheat oven to 350*F
Mix thoroughly butters, brown sugar, egg and molasses. Stir together and add all dry ingredients except white flour. Mix well. Using spoon and hands as needed, work in white flour.
Roll balls of dough and place on greased cookie sheet. Using a fork, mash down a criss-cross pattern. Bake about 10 min. Allow to sit a couple minutes and then remove to cooling racks
