Saucy Creole Chicken

Introduction

This recipe was originally for pork, but I changed it to chicken because we like chicken better. This is a very simple weeknight meal. This recipe was originally for pork, but I changed it to chicken because we like chicken better. This is a very simple weeknight meal.
Number of Servings: 4

Ingredients

    4 6oz Boneless Skinless Chicken Breasts
    2 Tbs Olive Oil, separated
    2 tsp Cajun or Creole Seasoning
    1/2 cup diced onion
    2 cloves garlic
    1 can Campbell's reduced fat cream of celery
    1/4 cup water
    1 14.5 oz can petite diced tomatoes

Directions

Season Chicken breast with Cajun seasoning. Saute in 1 Tbs oil over medium high heat until cooked through. Remove from pan and keep warm. Add remaining Tbs oil and saute onion and garlic for about 1 minute. Add tomatoes, soup water and parsley and stir well to combine. Place chicken breasts back in sauce, cover and simmer until warm & bubbly, about 5 minutes.
Makes 4 servings
