Ground Beef Veggie Soup

Introduction

Large recipe, cook in a 16 quart soup pot.
Serving size is 1 cup.

Ingredients

    2 lbs. ground beef, low fat
    1 tbsp olive oil
    1 large onion, chopped
    1/2 cup raw barley, can be pearled
    1/2 medium head cabbage, chopped
    4-5 medium carrots, diced
    2 quarts green beans,(8 cups)
    2 quarts tomato juice, (8 cups)
    2 pints tomatoes, stewed
    1 pint corn/okra/tomato mix
    2 cups corn, frozen or canned
    1 cup peas, frozen or canned

Directions

Brown beef, add onions, barley, and water and simmer for about 10 minutes. Add remainder of ingredients, bring to boil, then turn down heat and let simmer for 1 1/2 hours. Season to taste.
I use italian seasoning, salt, pepper, garlic salt,
basil. You can use whatever kind of seasoning
you like best.
