Pizza Scramble

Introduction

A quick low-carb treat for those of us who miss the taste of pizza but don't like the waste of scraping off toppings and discarding the base! A quick low-carb treat for those of us who miss the taste of pizza but don't like the waste of scraping off toppings and discarding the base!
Number of Servings: 2

Ingredients

    50gm Pepperoni slices
    1 cup Mushrooms, sliced
    1 rasher Bacon, chopped
    1/2 cup Green peppers, chopped
    Black olives, 5 - 10, chopped
    1/2 cup cheddar cheese (or pizza cheese)
    4 eggs

Directions

Heat a little oil in a frying pan, and add pepperoni, bacon, peppers, mushrooms, and olives. Stir until mushrooms have browned slightly.


Add eggs and cheese to frying pan, and stir continually until all egg has cooked (will look like scrambled eggs).


Divide between two bowls and serve, topped with a little grated parmesan if you like.
