Ramen Veggie Mix

Ingredients

    Ramen Noodles, 1 package
    Broccoli florets, fresh, 0.5 cup,
    Cauliflower, raw, 0.5 cup
    Baby Carrots, raw, 0.5 cup,
    Onions, raw, 0.5 cup, chopped
    Mushrooms, fresh, 0.5 cup, pieces or slices
    Cabbage, fresh, 0.5 cup, chopped
    Spinach, fresh, 1.5 cup
    Curry powder, 1 tsp
    Salt, 1 tsp
    Garlic, 5 cloves
    Chicken or Vegetable Broth
    1 tbsp Olive Oil

Directions

Chop or slice the vegetables to your liking.
Saute Onions, garlic, mushrooms and cabbage about 5 minutes in the olive oil and a 1/4 cup of the broth. Add the curry powder and salt. Throw in the other vegetables and 1/2 to 3/4 cup of the broth. Simmer to the consistency of your choice, some people like their veggies soft, others crispy. Add the ramen and just enough broth to cover it. Cook another 3 minutes and serve. I also like to add a smidgeon of the spice packet that comes in the Ramen. You can also add a little cayenne if you like spicy. Brown rice goes well with this.
