Introduction

My aunt Gwen was a great cook and she kept go-to, quick recipes that were always as good as her spent-all-day-making recipes. This was one of my favorites from her go-to, quick list. Ingredients

    1 lb 93% lean ground beef
    1 cup chopped onions
    1 10.75 oz can Campbell's Healthy Request Cream of Mushroom Soup
    1/4 cup water mixed with soup
    1/4 tsp salt(optional)
    1/4 tsp black pepper
    3-4 medium potatoes, thinly sliced with skin on

Directions

Brown ground beef and onions, drain.
Spray the bottom of a 2 qt glass baking dish(11x9 inch). Cover the bottom of the dish with a layer of potatoes and a layer of ground beef. Pour half of soup mixture over this. Add another layer of potatoes and ground beef, pour remaining soup mixture over this also. Bake covered for 1 hour at 350°F.
MAKES 6-8 SERVINGS

    This is really great. I made two changes. First, I added just an bit more water to the soup. Then on the last layer, I mixed the meat and onion with the mushroom soup before pouring over the potatoes. Made assembly easier. My family thought it was delicious. - 7/19/09

    I really liked this dish. I did add a few extras to kick it up a notch though. Some mushrooms, red peppers and a little extra seasoning. Next time I think I will use turkey sausage links sliced thin instead of ground beef. Great recipe though!! - 12/7/09

    I had to modify a bit for time - I cubed my potatoes and nuked them, added to the beef and soup mix and stirred together - finished cooking on stovetop. Did whole thing in cast iron skillet. Foil over it at the end. Edges got crispy.
    still want to try the layers way - too little time after work - 4/2/10

    Was a little bland at first but after reading the comments I added a bit more spice to it. My husband suggested chili powder for a "kick" and that turned out great. We will be making this again and trying different seasonings. - 4/30/10

    Me & my boyrfriend (who isn't tryin to eat healthy) both loved it. Some of the potatoes were a little undercooked..will prob slice the slices in half next time. For seasonings I added pepper, italian seasoning, parsley, onion powder (because I didn't add real onions), & garlic. I added corn too. YUM - 5/26/10

    My husband loved this, and he is fairly picky! I only had to use 2 whole potatoes, so I also added about 1/2 cup of fat-reduced shredded cheddar cheese in the last 5-10 minutes of baking. It was terrific! - 5/18/10

    I increased the water to about 1/2 cup, added some extra spices that I like, and a clove of garlic. I also experimented with the recipe by using egglplant in half of the mixture instead of potatoes. Using eggplant instead of or in addition to potatoes is a very good variation! Super easy, thanks! - 9/4/11

    I've made this for years and I use turkey burger in place of ground beef. I also add green beans between layers and fat free or low fat monteray jack cheese on top. My family loves this! I read someones comment about adding corn and I am going to try it that way next time I make it. - 1/18/11

    Delicious,easy recipe. I added some thinly sliced carrots to the ground beef mixture and subsituted cream of chicken soup.I ended up making three layers because my potatoes were large so I had to add more water to the soup and i cooked it for an extra 30 mins. End result was a hit! Thanks! - 5/26/11

    I made this tonight and it was wonderful and easy! I did add salt and pepper, plus a little red pepper and garlic. I also did not have any onions so I added chopped dry onion to the ground beef. I used two cans of mushroom soup also. It was wonderful and my 6 year old gobbled it up. - 1/13/10

    This was really tasty and my husband loved it. I don't think I cut the potatoes thin enough because they were slightly undercooked after the 1hour bake. I'l definitely make it again! - 3/7/10

    It was pretty good - I added about 4 cloves of garlic to the onion and meat. And also substituted half the ground beef for an equal amount of breakfast sausage. Yum. Threw in some mushrooms and frozen corn, used cream of chicken soup, and added paprika to the soup. My hubby and I both enjoyed it! - 12/2/10

    I have hamburger on my menu this week so I will definitely use this idea, but like the others I will add other veggies to make it a one dish meal. If it is too hot inside I will use the bbq on one side and cook some chicken on the other for later in the week! - 8/1/10

  • I also used 2 can's of the soup, 1/2 cup water, some mushrooms, and precooked the potatoes in water for 12 min. because I had the time. Then layered the meat and soup with potatoes and added jack cheese towards the end of the baking time. Would add peas next time, and garlic. - 11/9/14

  • After 45 min I checked on potatoes and they weren't browned at all.I uncovered the last 15 but still not brown, so I added an addtional 10 min to baking time. I finally turned up to 400 and added another 15 min, which made potatoes brown, but the meat dry - 2/26/14

  • I also added Italian Seasoning and Rosemary over the layers. I used Gluten Free Cream of Mushroom, so it was a little thinner that I would have liked. I think next time I will use a smaller pan (square) instead of the 11x9 (rectangle). It may set up a little better and be easier to serve. But yum! - 10/19/13

  • I recommend microwaving the potatoes for 5-7 minutes after slicing. It will make sure they are cooked through. We are going to use 2 cans soup, and 2 lbs of meat next time. We also used 96/4 hamburger meat. Sprinkled pepper and grated, low fat chz on top. Husband added a little cumin to his. - 7/9/13

  • one question....how do you calculate the serving? I mean is it 1 cup or do you weight it?? I'm tracking my calories intake and I'm having a hard time figuring out how much of it I can have...   • I thought this was very good. We wanted left overs so we doubled the recipe. I did make a couple changes. Instead of the 2nd can of mushroom soup I added cream of cheddar cheese soup. Added garlic and emeril essence and 1 package 1/3 less fat cream cheese. I sliced my potatoes thicker,cooked at 400F - 3/19/13

  • Very nice. I added a bag of microwave streamed mixed veggies (4 serving) and 4 oz of shredded 75% reduced fat cheddar cheese. I cooked the casserole for 75 minutes and then added the cheese to the top to melt. My nutrition info is 275 calories, 5.5 fat, 35.95 carbs, 3.1 fiber and 20.9 protein. Enjoy - 1/23/13

  • I don't like to read so much when people totally change up a recipe, it becomes a different recipe at that point, but I did cook the potatoes in the microwave for 5 minutes, all the potatoes at once, as they never seem to fully cook in a casserole setting.   • Hello, this is a similar dish we make in our country called Potato Mosaka with ground beef. We do it just a little differently though that might speed up the cooking time. We saute altogether in olive oil, pour in pan, then mix in small bowl, two eggs and 1/2 cup of milk and pour on top. Bake at 375 - 8/28/12

  • This was excellent, thanks so much! I made it with mashed potatoes and followed the rest. I added some colored peppers in the middle and on top I put pepperoncinis. In the last 10 minutes I put some graded cheddar cheese. It was fantastic!!!!! - 8/8/12

  • I mixed mine up a lot. I added green beans, green bell peppers chopped fine, mushrooms, and flax seed. I should have added a second can of soup, so i will definately make this again. I will also add more spices because it was a bit bland and I typically like food with a bit of kick. - 4/10/12

  • My grandmother used to make something very similar to this and I always loved it as a type of comfort food. I am making it tonight but a little different. I will use Turkey instead of Beef and red potatoes. I'm also adding mushrooms, garlic and Kraft Mexican pepperjack and cheddar cheese - 3/24/12

  • I didn't get great results with this one. It tasted good, but the dish was too dry, leaving the edges of the potatoes overcooked and tough. I did stir it a couple of times while it was cooking in the slow cooker...I would add more water next time. - 3/11/12

  • Enjoyed this as a quick, make ahead meal on a busy night. I did put carrots in (did on my mandoline when I did the potatoes), and also some montreal steak seasoning.
