Stove Top Souffle

Ingredients

    4 egg whites
    1/2 cup blueberries or fruit of your choice
    1 packet Truvia or Stevia
    cinnamon to taste

Directions

Beat egg whites until fluffy (like meringue) Sprinkle with sweetener as it's whipping.

In nonstick pan sprayed with non-stick cooking spray, cook fruit, if liquid accumulates pour off.
Spread fruit out evenly, spoon whipped egg whites over fruit, sprinkle with cinnamon. Cover tightly with lid & cook on low until egg whites are firm to your touch. Or you can tell it's done by stabbing it with a knife.
