Grilled tenderloin w/ caper mayonnaise

Ingredients

    1 beef tenderloin 2 -3 lbs
    3 cloves garlic, cut into this slivers
    2 tbsp olive oil
    1 tbsp black peppercorns, crushed
    1/4 tsp salt

    Caper mayo -------
    1/2 cup light mayo
    1tbsp olive oil
    2 tsp mustard
    1tsp fresh lemon juice
    1 tbsp capers, drained, rinsed and chopped

Directions

1. pat meat dry w/ paper towel. Using tip of a sharp paring knife, make small slits all over meat. insert garlic slivers. Rub meat with oil. Press peppercorns onto meat. Sprinkle with salt. Place on plate, cover w/ plastic wrap, refrigerate 2 hrs.

2. Caper mayo -- Whisk together mayo, oil, mustard and lemon juice in a small bowl. Fold in capers. Chill 1 hour.

3. prepare a grill so it is hot on one side (*see below for roasting instructions) Sear meat on all sides over direct heat, about 5 min total. Move to side, off direct hear and cover grill. Grill meat about 12 min per side for med rare or until internal temp is 145 deg on an instant thermometer. Serve with caper mayo.

*to roast in oven------ heat oven to 450 deg. coat a roasting rack w/ nonstick cooking spray. Place tenderloin on prepared rack. Roast 40 min for med rare or until internal temp is 145 on thermometer.
