Number of Servings: 6

Ingredients

    8 cups water
    1 tsp. beef base
    1 cup lentils, rinsed
    1 medium head cabbage, cut to preference
    1 large carrot, sliced thin
    1 medium onion, sliced thin
    1 jalapeno pepper, diced
    1- 14.5 oz (411g)can diced tomatoes
    2 TBS. ground cumin
    1/2 TBS. ground turmeric
    1 tsp. ground ginger
    1 TBS. extra virgin olive oil


Directions

Makes 6 servings.

In a large stock pot, place water, beef base, and lentils. Cook on high for ten minutes.
Cut cabbage, carrot, onion, and jalapeno. Add to soup, stir, and turn down to med-high for ten more minutes.
Add tomatoes, spices, and oil. Mix and turn down to medium/ med-low for 30-40 more minutes, stirring occasionally. Serve hot with pasta, brown rice or bread of choice. Enjoy!
