Creamed Spinach

Number of Servings: 4

Ingredients

    * Spinach, fresh, 2 package (10 oz)
    * Onions, raw, 1 small chopped
    * *Flour, white, 2 teaspoons
    * Salt, 1 dash
    * Nutmeg, ground, 1/8 teaspoon
    * Milk, nonfat, .5 cup
    * Low fat cream cheese, .5 cup

Directions

Remove stems from spinach and rinse with cold water; drain.
Place a large Dutch oven over medium heat and add spinach. Cover and cook 5 minutes or until wilted; stir spinach well after 2 minutes.
Combine flour, salt, and nutmeg; add to pan and stir well. Cook 30 seconds. Add milk and cheese. Stir with a whisk; cook until thickened.
Add spinach; cook 30 seconds or until thoroughly heated.
