Pork Chop Bake

A great weeknight meal.
Number of Servings: 4
Ingredients

4 pork chops, fat removed
4 med/large red potatoes
1 large yellow onion
1 green pepper
6 crimini (or white) mushrooms, sliced
1 can (10.75 oz.) cream of mushroom soup, ( I use reduced fat and low sodium)
1/2 Cup water
salt/pepper
1 T oil
Directions
Preheat oven to 350 degrees.
In skillet with oil, cook pork chops 2-3 minutes per side, until slighly browned (salt/pepper each side first if you prefer)
Once brown, place pork chops in baking dish.
Cut potatoes, onion, mushrooms and green peppers into bit size slices/pieces (about 1/2 inch) and spread on top of pork chops in baking dish.
Mix together mushroom soup and water and spread mix over pork chops and vegetables.
Salt/pepper to taste.
Bake uncovered for 30-40 minutes at 350 degrees, make sure potatoes are tender.
Remove from oven and enjoy!
